Scrub your potatoes with a wet scrubber. Pat dry with a towel. Just get the blemishes off here, don't apply too much water to the potato as it will soak it up and make the frying process longer.

Using a mandolin, slice the potatoes lengthwise to get chips to your liking. In a large cast-iron pot filled with oil, bring oil to temperature of 350 degrees.

Fry potato chips in batches. Get drainage basket ready with some salt. Frying takes 6-10 minutes per batch.

As the chips brown and finish frying, drain them in the pot lightly, then place in the drainage basket. Shake the basket and shake salt onto the chips (or salt + pepper if that's your thing).
